Talc, specifically Talcoliva®, is compliant with the European Directive 2001/30/EC for use in the extraction of olive oil. Talcoliva prevents the formation of emulsions and breaks up emulsions previously formed facilitating easier extraction of the oil from the paste. This in turn reduces the amount of fruit solids left in oil that can cause cloudiness and higher levels of sediment. Talcoliva also absorbs droplets of oil retained in the cell walls of the olive forming larger drops and increasing the amount of free oil. This improves the yield of oil from the paste thereby increasing a plant’s production capacity. It further allows milling to be undertaken at a lower temperature as the lipophilic characteristics of Talcoliva are temperature independent.
