This recipe is perfect for cilantro lovers near and far! This hummus is so tasty and easy to make you will never be able to pick up a store bought hummus again. A vibrant and zesty take on a healthy appetizer. The addition of cilantro brightens up a traditional dip and gives the hummus a fresh twist.
1 bunch, cilantro
3 cloves, garlic
Juice of one lemon – about 2 tbsp
3 tbsp, tahini
3 tbsp, Organic Arbosano EVOO – plus more for drizzling
1, 15-ounce can, garbanzo beans
½ tsp, kosher salt
¼ tsp, black pepper – freshly ground
1 tbsp, pine nuts
Add the cilantro, deseeded jalapeno, garlic cloves, lemon juice, tahini and EVOO to the bowl of a food processor, pulse until a smooth sauce forms. Processing these ingredients first will give the tahini and lemon juice time to firm up which will help ensure a smooth texture for your hummus.
Drain the garbanzo beans and add to the food processor, season with the salt and pepper. Pulse the mixture until smooth.
Transfer your hummus to a plate and top with a drizzle of EVOO and the pine nuts.
Serve with warm pita or carrot slices.
