Strawberry Balsamic Truffles

This recipe was born out of two great loves: chocolate and strawberries. Our warehouses are located in Santa Maria, California...home to thousands of acres of strawberry fields. In fact, in 2018, Santa Maria strawberry acreage made up about 25% of the total California crop. We were very picky when we selected our Strawberry Balsamic Vinegar. Crafted in Italy it's made with real strawberry juice, and you can tell the difference. These rich Strawberry Balsamic Truffles are relatively easy to make, and pair beautifully with a lovely glass of red wine. Buon appetito!

Strawberry Balsamic TrufflesIngredients:
  • 8 ounces of dark chocolate (70% and above preferred)
  • ¼ cup heavy whipping cream
  • 2 tablespoons Strawberry Balsamic Vinegar
  • ¼ cup cocoa powder
Instructions:

Heat a ½ inch of water in the bottom of a double boiler over high heat, right before the water starts to boil turn heat down to low.

While water is heating break the chocolate into pieces.

Add the chocolate pieces to the double boiler and stir until melted.

Slowly stir in the heavy whipping cream. Mix until smooth.

Once completely smooth add the Strawberry Balsamic Vinegar, stir until combined.

Allow the chocolate mixture to cool at room temperature, until it is firm but still moldable. (About an hour)

Use a teaspoon to measure out each truffle and roll into a ball.

Add the cocoa powder to a small bowl and roll the truffle in the cocoa powder until evenly coated.

Repeat with each truffle.

Store truffles in an airtight container for up to a week.
